Bascar, do you think it's possible he meant it in the admiring "Wow, you can cook that?" kind of way rather than the doubting "are you sure you can cook that?" kind of way?

We had "more tempo!!!" in all the trot work--particularly shoulder in to renvers, where he happily dies as I'm trying to organize all my limbs and keep him forward ... And yes, it was exhausting, but enlightening. Especially watching it on video.

Excellent first day of clinic. Guess what? we worked on straightness... and we were not alone. I think everyone worked on straightness, particularly at the canter. He was such a good boy. It certainly helped our relaxation and work ethic that this barn and indoor complex is kept at a constant 53 deg...

Split it, stuff it with a mix of pancetta, garlic, sage and apricots, band aid it back together with sage leaves, salt it, wrap it in foil, cook on grill, turning occasionally. If it looks a bit pale when you unwrap it, just sear it in the hot grill.

Will have to try Bascar's short ribs recipe. I do mine in red wine. Saute a finely chopped onion and carrot (and stick of celery if it doesn't make you gag...) in olive oil until soft, remove, brown shortribs in the same pan in a little extra oil, add the onion and carrot back in. We are struggling with farriery for my 30 year old now. I've just had to switch farriers and one of the harder things was finding someone with the patience (and the back) to be able to work on Lucky, who has two fused front pasterns due to ringbone--he just doesn't bend where he is expected to bend....
