Re: Simple pleasures. The grilled cheese sandwich...

Aged cheeses have lots of flavor but don't melt well, young cheeses melt but have no taste - so you need a combination of the two in about a 1:3 ratio of aged to young. Good bread is essential, you need something robust, but absorbent, not too crusty and not too chewy - day old sourdough is my choic...

Re: Winter Feeding of the Older Gelding

I had 2 very senior geldings with me last year, both with no, or very few, teeth. So, alfalfa pellets, rice bran, equine senior and beet pulp all soaked with top dressings of cool, calories and fresh ground flax seed. I used heated 15 gallon water buckets to both soak the feed in and to keep it from ...

My boy competes at Galway Downs this weekend, I'm on my way to see him now, at Novice. He qualified for the YEH 4 yr old championship but the fences are Training height and we don't think he's ready for that. He thinks he's is of course, he just loves showing and running and jumping. :D I can't wait...

Smoked fish seems to work because fish has a distinctive taste to begin with, chicken can't compete wit...

OK, go look up BBC Radio 4 extra online. Listen to British radio--excellent plays, series, comedies, something for everyone, free. I love a good mystery, myself--classics like Lord Peter Whimsey, amongst may others. I hope the ex gets a bad case of hives. I was going to suggest exactly the same. Ra...

Desperately trying to clean out the fridge before I leave for CA. So - saute the last onion with some garlic and last of the bacon. Add diced pork and brown. Deglaze the pan with brandy (because brandy goes off if you leave it. Well known fact). Add the rest of the wild apple puree, some whole grain...
