So far, of the ones you've mentioned, the climbing hydrangea is the only one I would consider, because of the thug like behavior of the others. And definitely a trellis, so it only looks like it's on the house!

I agree with Boots, although I don't think I would have picked up on it myself. The back legs look like they are coming out of the same hole.
As far as the technique goes, I don't love these, but I think it has huge potential.

I do understand the pangs of leaving your old barn. Just a PS to Alex's post above - you don't want to add topsoil around trees.

You see lots of trees with beautiful mounds of mulch around the trees - it's not nice to the trees. They don't like it.

I planted 4 hellebores under a tree. Two thrived, one limped along, and one didn't make it. I also had heuchera and hostas around the same tree, so those things do seem to like the same conditions. (The last 2 h's thrived!)

And don't forget bungee cords. They can be your friend, and in a small horse operation, they aren't aggravating. I had three horses, and used metal cans and bungees.
