it really turned out well. Perhaps a little too long on the heat. I used my thermopen and it could have come out perhaps 2 minutes sooner

made my game hen this way today

done in about 20 minutes stove top to oven

I spatchcocked and removed the ribs and breast /keel. rubbed and refrigerated overnight. chili and lime

I used my Dutch Oven as brick and my cast iron skillet

I developed a sensitivity to tomato. I lived on home made pasta sauces back in the day. I did not have full on allergy attacks, but digestive and some skin sensitivity.
