First year my cherry tree is producing, and it's a bumper crop!
I have this cherry clafoutis in the oven right now, I'm going to pit and freeze some for later, and of course, share.
What else should I be doing with them? If it matters, they're a variety that's between a tart and bing; still sweet enough for fresh-eating. Flesh is light and skins are red.

Mmm, mmm, cherries! I like them best fresh as a snack. Obviously, you have better self control that I do.
Hopefully you have a good cherry pitter. Do you have a dehydrator? A local company has a line of dried fruits; my favorite is dried cherries with white chocolate; they make great gifts!
A coworker used to make cherry bounce; I’m pretty sure she used vodka as the liquor base and pitted the cherries. She’d start a few jars during cherry season and break some out at Christmas. I preferred the boozy cherries to the liquid, but both were good!

I have a hand held cherry pitter, but I was contemplating buying one on of the ones meant for doing more volume, as I watched my 5 gallon bucket fill up this morning.
Yes, I have a dehydrator - planning to fill that guy up tonight.
Hadn't thought about boozy cherries, I like that idea.
Think I'm going to do a cherry or cherry-rhubarb syrup of some type too.
