Recipes to Use Up Fresh Tomatoes

All of my Roma and slicing tomatoes are ripening at once. Any favorite recipes that use up a bunch of tomatoes? I probably should break out my dehydrator and dry some of the Romas, and make and freeze some salsa.

I made pasta sauce last week. I have a large pot of chili on the stove for tonight, which used up quite a few tomatoes, green chiles, and green peppers. I cooked up the dried pinto beans in 30 minutes using my Instant Pot - I love it!

Shakshuka uses a lot of tomatoes, it's really good. Rather that cook the eggs in it, we just hard boil them and dice them over the top (the purists are spinning!). Whole Foods has merguez. We serve it with couscous.

We also slice tomatoes, dry them, and freeze. They really enrich those dishes in the winter when fresh tomatoes are a distant memory.

If you have freezer space you could just bag them up and freeze them whole. Or slice and freeze. I love having stuff in the freezer that I can dump into soups and stews in the winter.

In the same boat. Canning tomato basil soup tonight. Something I call zucchini bolognese also uses lots ot tomatoes. Cook down to a paste in the slow cooker and freeze in ice cube trays or small containers.

Fried green tomatoes, tomato jam, tomatoes pie, etc.
