Hashbrown Casserole

I made this today for my work family. It was a hit.

1 bag of hashbrowns
1 500 ml tub of sour cream
2 cans cream of mushroom soup
½ c melted butter
½ cup grated onion (I used 2-3 small bunches of chopped green onion)
2 c of grated cheddar cheese (I used a whole bag of double cheddar)
1 pkg of bacon
Salt and pepper to taste (If you are adding the bacon, don’t add salt)

Cut up the bacon and fry it up. Once done, take everything on the list and throw it in a bowl and mix it up. Put it all in a 9x13 pan (grease the pan with butter – I just steal some from the ½ c from the recipe), and throw it in the oven at 350° for about an hour and half. Check on it at about 1 hr 15-20 min.

You could always change out the bacon with ground up sausage, ham, back bacon etc.

I'm also thinking green chilis might be a good spin too...

Might be on tap for New Year's Day and the Rose Parade ;)

Sounds like what my family calls "cheesy potatoes".

I don't remember what year my mom discovered the recipe, but it's not a holiday dinner without them. My kids always ask for grandma's cheesy potatoes.
