Make ahead lunches

Hey y'all :)

Lately I've been pretty good about making a whole big batch of something on Sundays for my husband and I to eat for lunches during the week. Everything I've made lately has been fairly unique, healthy, economical, and delicious so I thought I'd share in case you were looking for lunch ideas.

This week: quinoa and black bean salad with yellow bell peppers, roasted sweet potato, and chili lime cilantro drizzle (pinterest)
last week: French lentil, black olive, and mint salad with red bell peppers, feta, and sliced chicken breast (america's test kitchen)
week before: south american quinoa and vegetable stew with a poached egg, avocado, and feta (america's test kitchen)
week before that: farro casserole with roasted broccoli, sun dried tomatoes, and extra old cheddar (america's test kitchen)

Next week I think I'll try the recipe I have for wild rice, walnut, cranberry, and feta pilaf. :)

I rely on the hospital's cafeteria for my lunches. I'm not a leftovers fan, and I don't care for sandwiches.

goneriding - here's the exact one I made:

I also added chopped yellow bell peppers to it and mixed a few extra things in with the quinoa:
minced shallots
dijon mustard
chopped parsely
fresh cilantro
chili powder
cumin

Thanks to Rosie's reminder, I made a millet-sweet potato-kale side salad last night to go with some pesto-crusted salmon. I should make more grain salads--they are great leftovers!

I like to do a tuna salad with lots of pickled things, bell peppers, celery and green onions. Lentils if you do some carbs.

One I haven't done in too long is curried egg salad. I see it in my future though, as I have seven hens and collected 16 eggs over the last few days. Shovel it onto celery sticks or bell pepper slices, or into lettuce leaves. Yum.

What do you add to your hard boiled eggs for the curried egg salad?

I usually use homemade garlic mayo, yellow curry powder, celery, cayenne, green onions, and usually some raisins or chutney. Full-fat yogurt can work in place of the mayo too.
