Where to stay in Edinburgh Scotland

My chums and I are planning a trip to Edinburgh (either this year or next). As always, we will rent an apartment. We know nothing of neighbrohoods. We would want quiet (no boho or happening places), not upscale but not lower scale, more "upper of the middle road." Any suggestions? We are walkers so we don't have to stay right downtown, but we don't want to have to take 2 trains and a bus to get to the city center.
